GLUTEN FREE CHICKEN NUGGETS AND SIMPLE GREEK SALAD
A few years ago I discovered I was allergic to wheat. With that, some of my favorite guilty pleasures were eliminated from my diet. While I am healthier for it, I still miss the occasional fried delight or slice of pizza. These nuggets are a tasty and healthy substitute for a boxed or fried chicken tender. I hope you enjoy!
GLUTEN FREE CHICKEN NUGGETS
1lbs chicken tenders
2 eggs
1tsp. paprika
1tsp. pepper
1/2tsp. salt
3 bowls
1 tin foil covered cookie sheet
Preheat the oven to 400.
Place eggs in a bowl and beat and set aside. Place flour in a bowl. In the third bowl add bread crumbs, paprika, pepper and salt and blend.
Dip each chicken nugget in flour, then egg, then breadcrumbs. Fully coat the nugget each step of the way. Place on the cookie sheet.
Bake for 20 min. Enjoy! I like to dip my nuggets in honey mustard, but you can use whatever sauce you’d like.
SIMPLE GREEK SALAD
2c spinach
10 cherry tomatoes cut in half ( I like the multicolored ones)
1/2 cucumber diced
1/2c black olives pitted
1/2c sheep’s milk feta cut into cubes
1tbsp olive oil
1tsp balsamic vinegar
salt & pepper to taste
pinch of red pepper flakes
Add all ingredients in a large bowl, toss, serve.
