Sheet Pan Sausage & Veggie Bake
Ingredients
4 fully cooked chicken sausage, cut into chunks
1/2 red bell pepper, cut into 1 inch pieces
1/2 yellow bell pepper, cut into 1 inch pieces
1/2 yellow onion, cut into 1 inch pieces
1 broccoli crown, chopped into small florets
1 large potato, diced into 1/2 inch cubes
4 ounces Brussels sprouts, quartered
2 carrots cut into inch coins
2 tablespoons avocado oil or olive oil
1 tablespoon salt free Italian seasoning blend
1/2 tablespoon minced garlic
1 teaspoon kosher salt
(Cut veggies small and all the same size so they cook evenly)
Directions
Preheat oven to 400 degrees.
Combine all ingredients in a large bowl and stir well. Pour onto a large baking sheet and spread into one layer.
Cover with tin foil and cook for 20 min.
At the 20 min mark, remove tinfoil and cook for 10 more min.
